A healthy homemade breakfast
This might sound crazy, but we stopped buying convenience breakfast foods about a year ago.
No cereal, no prepackaged pastries, nada. We now stick to waffles that we make and freeze on the weekends; homemade oatmeal; yogurt parfaits; or a variety of eggs, skillet scrambles and casseroles.
Keeping breakfast homemade and simple has done several things for us. First, it helps to curb our sugar intake – and avoid the mid-morning sugar crash.
It also saves a lot of money. Yes, I have to be more intentional about planning out our breakfast for the week, but overall it’s been really worthwhile.
With dishes like this 5-ingredient breakfast casserole, you can even make your homemade breakfast the night before, if you choose.
There’s nothing better than simply popping breakfast into the oven in the morning and having a hot meal baking while everyone is starting their day.
How to make this easy 5-ingredient breakfast casserole
With 5 ingredients, you probably guessed this is a simple meal to assemble. And you’d be correct!
You only need: frozen southern-style hashbrowns (the diced kind); eggs, milk; ground pork or sausage; and shredded cheese.
Add some salt & pepper and you’ve got a delicious breakfast ready that’s nearly dump-and-go.
If you buy pre-shredded cheese and assemble this casserole the night before, it’s even less hassle. Although, I have to admit, I really like to shred my own cheese. 😉
Optional add-in ideas
If you have random onions and peppers that need to be cooked, you can easily dice and add them to this casserole.
Even finely chopped brocolli would be an excellent add-in. For even more flavor, you could also add some garlic or onion powder.
I buy eggs from local friends who raise chickens, and they definitely make our breakfast casseroles even more delicious!
The dark yolks are so nice and fluffy. If you have access to farm fresh eggs, this is a great way to utilize them.
5 Ingredient Breakfast Casserole
A simple breakfast casserole that can feed a crowd!
Ingredients
- 8 large eggs
- 1 cup of whole milk
- 1 lb ground pork or ground sausage
- 1 20-oz package frozen Southern Style hashbrowns
- 2 cups shredded cheddar or colby jack cheese.
- 1 teaspoon salt
- 1 teaspoon black pepper
- Fresh chives (optional garnish)
Instructions
- Preheat the oven to 375 degrees F. Spray a 13x9 or similar sized baking dish and set aside.
- In a large frying pan, brown the pork or sausage until no longer pink. Drain off any excess grease.
- Pour the hashbrowns into the bottom of the prepared pan and spread evenly.
- In a large bowl, whisk the eggs, milk and salt/pepper. Pour over the hashbrowns.
- Sprinkle the browned sausage evenly over the egg and hashbrown mixture.
- Top with the shredded cheese.
- Bake in the preheated oven for 45-50 minutes or until the cheese is golden and the center
is set. - Allow to cool slightly before serving.
- Top with chopped chives if desired.
Notes
This casserole can be made ahead the night before. Simply assemble, cover with plastic wrap and refrigerate. Remove plastic wrap and bake as directed, except you will need to add about 10 minutes to the baking time.
