Slow Cooker Cheesy Potatoes and Sausage

An all-in-one meal: slow cooker cheesy potatoes and sausage. It’s creamy, comforting goodness in a bowl.

There are few things I love more than a tried-and-true slow cooked meal. (Although, these days the Instant Pot is a fierce competitor.)

And when the temperatures start to dip in the fall, comfort foods are always on the menu.

Potatoes and sausage are basically staples in our pantry and freezer these days, hence this slow cooker experiment that our family happens to love!

Ingredient Options for Slow Cooker Cheesy Potatoes and Sausage

Russet potatoes are typically the best for the slow cooker, because they are sturdy and won’t turn to mush unless you really overcook them.

Yukon gold potatoes would also work nicely.

For the sausage, you can use any type of fully cooked sausage.

I’ve used both Apple Gouda Sausage and Apple Chicken Sausage (both from Butcherbox). This is my favorite “healthy” sausage – as healthy as pork can be, that is!

I typically like to shred my own cheddar cheese block, but for this recipe I used a Mexican cheese blend that was pre-shredded. Use whatever cheese you prefer!

The chicken broth gives this dish a ton of flavor. If you want to make your own, here’s a the chicken broth recipe I use. (You can pressure can it, or freeze it for later.)

Otherwise, you’ll need at least one 14.5-ounce can of broth.

Toppings and add-ins

As far as garnishes, there are several great options. Green scallions, diced bell pepper, cilantro, parsley, chives, bacon bits…

I’ve also used dehydrated bell peppers and tomatoes from the garden, which are delicious!

No need to re-hydrate them, just dump them in at the beginning of the cooking process. (You can also buy sun dried tomatoes in olive oil, which would be amazing!)

Ingredients

  • 4-5 large baking potatoes, diced
  • 1 package fully cooked sausage, sliced into coins
  • 1-1/2 cups shredded cheddar cheese (or cheese blend)
  • 4 oz. cream cheese
  • 2 cups chicken broth
  • 1/2 cup bread crumbs
  • salt and pepper to taste
  • Fresh sliced green onion, parsley, chives or bell pepper (optional)

Instructions

  1. Add diced potatoes and sliced sausage to slow cooker.
  2. Add shredded cheese, cream cheese, and chicken broth.
  3. Slow cook for 5-1/2 hours on low, or cook on high for 3 hours, or until potatoes are fork-tender.
  4. Add 1/2 cup bread crumbs, stir and cook on high an additional 30 minutes (sauce will thicken).
  5. Season with salt and pepper to taste.
  6. Serve and top with optional garnishes.
  7. Enjoy!
